Ingredients
- 8 oz Rotini or penne pasta
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1/2 red onion, diced
- 1 cucumber, diced
- 1 cup feta or mozzarella cheese, crumbled or cubed
- 1/2 cup mayonnaise
- 1/2 cup yogurt
- 2 tbsp lemon juice
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Optional: cooked chicken or beef bacon
Instructions
- Cook the pasta according to package instructions. Drain and cool it under cold water.
- Prepare the vegetables by chopping them into bite-sized pieces.
- In a large mixing bowl, combine cooled pasta, chopped vegetables, and cheese.
- In another bowl, whisk together mayonnaise, yogurt, lemon juice, and seasonings.
- Pour the dressing over the pasta mixture and toss gently until everything is well coated.
- Chill in the refrigerator for at least 30 minutes or serve immediately.
Notes
For a lighter dressing, substitute Greek yogurt for mayonnaise. This pasta salad holds up well in the fridge for up to three days.
