Description

A delightful creamy pasta salad bursting with flavors and textures, perfect for gatherings or a quick meal.


Ingredients

  • 8 oz Rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1/2 red onion, diced
  • 1 cucumber, diced
  • 1 cup feta or mozzarella cheese, crumbled or cubed
  • 1/2 cup mayonnaise
  • 1/2 cup yogurt
  • 2 tbsp lemon juice
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Optional: cooked chicken or beef bacon


Instructions

  1. Cook the pasta according to package instructions. Drain and cool it under cold water.
  2. Prepare the vegetables by chopping them into bite-sized pieces.
  3. In a large mixing bowl, combine cooled pasta, chopped vegetables, and cheese.
  4. In another bowl, whisk together mayonnaise, yogurt, lemon juice, and seasonings.
  5. Pour the dressing over the pasta mixture and toss gently until everything is well coated.
  6. Chill in the refrigerator for at least 30 minutes or serve immediately.

Notes

For a lighter dressing, substitute Greek yogurt for mayonnaise. This pasta salad holds up well in the fridge for up to three days.
