Ingredients
- Slices of bread (your choice; whole grain works wonderfully)
- Cottage cheese (can substitute with ricotta)
- Fresh tomatoes (sliced; heirloom or cherry tomatoes preferred)
- Olive oil (for drizzling)
- Salt and pepper (to taste)
- Fresh herbs (like basil or chives, optional)
Instructions
- Preheat your air fryer to 370°F (188°C).
- Place the bread slices in the air fryer basket, making sure they do not overlap.
- Air fry for about 5 minutes, or until golden brown and crispy.
- Meanwhile, in a bowl, mix the cottage cheese with a pinch of salt and pepper.
- Once the bread is done, spread the seasoned cottage cheese on each slice.
- Top generously with sliced tomatoes.
- Drizzle with olive oil and sprinkle with fresh herbs if using. Serve immediately.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to two days. For reheating, pop the toast back in the air fryer for a few minutes. Avoid freezing, as tomatoes and cottage cheese do not hold up well.
