Ingredients
- 1 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups granulated sugar
- 3 large eggs
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup buttermilk or milk
- 1 cup hot water
- 2 cups pitted cherries (fresh or jarred)
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- Optional: Dark chocolate shavings for garnish
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour your cake pans.
- In a large bowl, mix together the flour, cocoa powder, baking powder, baking soda, and salt until combined.
- In another bowl, whisk together the granulated sugar, eggs, vegetable oil, buttermilk, and vanilla extract. Gradually blend the dry ingredients into this mixture.
- Slowly incorporate hot water into the batter; it will be thin. Carefully divide it between the prepared pans.
- Bake for 30 minutes, or until a toothpick comes out clean. Let cool before removing from pans.
- For the filling, whip heavy cream and powdered sugar until soft peaks form.
- Once the cakes are cooled, layer them with the whipped cream and cherries in between each layer and on top.
Notes
For the best flavor, allow your eggs and milk to reach room temperature before incorporating them into your batter. Store leftovers in an airtight container in the refrigerator for up to 3 days.
