Description

A quick and nutritious vegan wrap filled with creamy avocado and hearty black beans, perfect for any occasion.


Ingredients

  • 1 large tortilla
  • 1 ripe avocado, mashed
  • 1 cup black beans, rinsed and drained
  • 1 cup diced tomatoes
  • 1/2 cup corn (fresh or canned)
  • 1/2 cup diced bell pepper
  • 1/4 cup chopped cilantro
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Lettuce leaves


Instructions

  1. In a bowl, mix together the mashed avocado, black beans, tomatoes, corn, bell pepper, cilantro, cumin, salt, and pepper until well-blended.
  2. Lay the tortilla flat on a clean surface and arrange a layer of lettuce leaves in the center.
  3. Spoon the avocado mixture generously on top of the lettuce.
  4. Carefully fold the tortilla around the filling, tucking in the sides as you roll it up tightly.
  5. Preheat a skillet over medium heat and place the wrap seam-side down. Cook for about 2-3 minutes on each side, or until golden brown and crispy.
  6. Once ready, remove the wrap from the skillet, slice it in half, and serve while warm.

Notes

Customize the spices to your taste and feel free to swap ingredients, such as using spinach instead of lettuce.
