Description

A refreshing and versatile salad that combines creamy avocado, crunchy veggies, and zesty flavors, perfect for summer gatherings.


Ingredients

  • 1 large ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ¼ red onion, finely chopped
  • 1 bell pepper (any color), diced
  • ¼ cup fresh cilantro or parsley, chopped
  • Juice of 1 lime
  • Olive oil, to taste
  • Salt and pepper, to taste


Instructions

  1. Combine diced avocado, cherry tomatoes, cucumber, red onion, and bell pepper in a large mixing bowl.
  2. Drizzle olive oil and lime juice over the salad, and sprinkle with salt and pepper.
  3. Toss everything gently together, being careful not to mash the avocado.
  4. Fold in the chopped herbs and give it another gentle mix.
  5. Serve immediately or let it chill in the fridge for about 30 minutes to meld the flavors.

Notes

Consider adding black beans for extra protein or corn for sweetness. Feta cheese can enhance the flavor further.
