Ingredients
- 1 can black eyed peas, drained and rinsed
- 4 slices of bacon, chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 cup chicken broth (optional for extra flavor)
- Chopped parsley for garnish (optional)
Instructions
- Heat a large skillet over medium heat, and add the chopped bacon. Cook until crispy, then remove it from the pan and set aside, keeping the drippings in the skillet.
- In the same pan, toss in the chopped onion and minced garlic. Sauté until the onion turns translucent.
- Add the drained black eyed peas and the crispy bacon back into the skillet.
- If using, pour in the chicken broth and allow it to simmer for 5-10 minutes.
- Season generously with salt and pepper according to taste.
- Serve warm, garnished with fresh chopped parsley if desired.
Notes
Feel free to use vegetable broth instead of chicken broth for a vegetarian option.
