Description

A comforting dish featuring black eyed peas and crispy bacon, perfect for any occasion.


Ingredients

  • 1 can black eyed peas, drained and rinsed
  • 4 slices of bacon, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 cup chicken broth (optional for extra flavor)
  • Chopped parsley for garnish (optional)


Instructions

  1. Heat a large skillet over medium heat, and add the chopped bacon. Cook until crispy, then remove it from the pan and set aside, keeping the drippings in the skillet.
  2. In the same pan, toss in the chopped onion and minced garlic. Sauté until the onion turns translucent.
  3. Add the drained black eyed peas and the crispy bacon back into the skillet.
  4. If using, pour in the chicken broth and allow it to simmer for 5-10 minutes.
  5. Season generously with salt and pepper according to taste.
  6. Serve warm, garnished with fresh chopped parsley if desired.

Notes

Feel free to use vegetable broth instead of chicken broth for a vegetarian option.
