Ingredients

  • 8-10 slices bacon, cooked and chopped
  • 1 tbsp butter or olive oil
  • 1 large onion, diced
  • 2 large carrots, peeled and sliced
  • 4 cups chicken broth
  • 1-2 tsp salt (adjust to taste)
  • 1 tsp black pepper
  • 1 tsp garlic powder (or 4 cloves minced garlic)
  • ¼ tsp dried thyme
  • ½-1 tsp red chili flakes (optional for heat)
  • 16 oz gnocchi
  • 2 cups heavy cream or half-and-half
  • 2 cups shredded cheddar cheese (medium or sharp)


Instructions

  1. Crisp the bacon by cooking it in a large skillet over medium heat until crispy, then remove, chop, and set aside.
  2. Sauté the diced onion and sliced carrots in the same pot with butter or olive oil until softened, about 5 minutes.
  3. Pour in the chicken broth and bring the mixture to a gentle simmer.
  4. Add the heavy cream, stirring well to combine, and season with salt, pepper, garlic powder, thyme, and optional red chili flakes.
  5. Mix in the gnocchi and cook until tender, about 2-3 minutes.
  6. Stir in the shredded cheddar cheese until melted, add back the crispy bacon, and adjust seasoning to taste.
  7. Serve hot and enjoy!

Notes

For a vegetarian option, omit the bacon and use vegetable broth. Customize with different cheeses for varied flavors.
