A comforting and creamy soup featuring smoky bacon and cheddar cheese, perfect for busy weeknights.
Ingredients
- 8-10 slices bacon, cooked and chopped
- 1 tbsp butter or olive oil
- 1 large onion, diced
- 2 large carrots, peeled and sliced
- 4 cups chicken broth
- 1-2 tsp salt (adjust to taste)
- 1 tsp black pepper
- 1 tsp garlic powder (or 4 cloves minced garlic)
- ¼ tsp dried thyme
- ½-1 tsp red chili flakes (optional for heat)
- 16 oz gnocchi
- 2 cups heavy cream or half-and-half
- 2 cups shredded cheddar cheese (medium or sharp)
Instructions
- Crisp the bacon by cooking it in a large skillet over medium heat until crispy, then remove, chop, and set aside.
- Sauté the diced onion and sliced carrots in the same pot with butter or olive oil until softened, about 5 minutes.
- Pour in the chicken broth and bring the mixture to a gentle simmer.
- Add the heavy cream, stirring well to combine, and season with salt, pepper, garlic powder, thyme, and optional red chili flakes.
- Mix in the gnocchi and cook until tender, about 2-3 minutes.
- Stir in the shredded cheddar cheese until melted, add back the crispy bacon, and adjust seasoning to taste.
- Serve hot and enjoy!
Notes
For a vegetarian option, omit the bacon and use vegetable broth. Customize with different cheeses for varied flavors.
