Description

Ingredients

  • 1 cup black-eyed peas
  • 4 slices of bacon
  • 1 can of green chilies (mild or hot)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil (optional)
  • 1 teaspoon cayenne pepper (optional)


Instructions

  1. Soak the Peas: Begin by soaking the black-eyed peas in water overnight.
  2. Cook the Bacon: In a large skillet, cook the bacon over medium heat until crispy, then remove and crumble.
  3. Sauté Aromatics: Using the same skillet, add the chopped onion and minced garlic. Sauté until the onion is translucent.
  4. Combine and Cook: Add the soaked black-eyed peas, green chilies, and crumbled bacon to the skillet, covering the peas with water. Season with salt, pepper, and cayenne.
  5. Simmer the Dish: Let everything simmer for about 30-40 minutes until the peas are tender, stirring occasionally.
