Description

A rich and creamy bowl of loaded bacon potato soup, perfect for cozy evenings and family gatherings.


Ingredients

  • 4 large potatoes, peeled and diced
  • 6 slices of bacon, chopped
  • 1 medium onion, diced
  • 3 cloves of garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)


Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Once done, remove the bacon and leave the drippings in the pot.
  2. Add the diced onions and minced garlic to the pot, sautéing until the onions become translucent.
  3. Toss in the diced potatoes and pour in the chicken broth. Bring the mixture to a boil.
  4. Lower the heat and let it simmer for 20-25 minutes, or until the potatoes are tender.
  5. For a creamier texture, use a potato masher to mash some of the potatoes directly in the soup.
  6. Stir in the heavy cream and half of the shredded cheese. Season generously with salt and pepper to suit your taste.
  7. Serve hot, garnished with the crispy bacon, the remaining shredded cheese, and fresh green onions.

Notes

Feel free to swap chicken broth for vegetable broth for a vegetarian version or use dairy-free cream for a lighter option. For additional nutrition, consider adding kale or spinach during the last few minutes of simmering.
