Ingredients
- 4 large potatoes, peeled and diced
- 6 slices of bacon, chopped
- 1 medium onion, diced
- 3 cloves of garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or your choice)
- Salt and pepper to taste
- Green onions, chopped (for garnish)
Instructions
- In a large pot, cook the bacon over medium heat until crispy. Once done, remove the bacon and leave the drippings in the pot.
- Add the diced onions and minced garlic to the pot, sautéing until the onions become translucent.
- Toss in the diced potatoes and pour in the chicken broth. Bring the mixture to a boil.
- Lower the heat and let it simmer for 20-25 minutes, or until the potatoes are tender.
- For a creamier texture, use a potato masher to mash some of the potatoes directly in the soup.
- Stir in the heavy cream and half of the shredded cheese. Season generously with salt and pepper to suit your taste.
- Serve hot, garnished with the crispy bacon, the remaining shredded cheese, and fresh green onions.
Notes
Feel free to swap chicken broth for vegetable broth for a vegetarian version or use dairy-free cream for a lighter option. For additional nutrition, consider adding kale or spinach during the last few minutes of simmering.
