Description

Delicious chicken foil packets featuring tender chicken, savory seasonings, and fresh vegetables, ideal for gatherings or busy weeknights.


Ingredients

  • 2 chicken breasts or thighs (boneless, skinless)
  • 2 slices beef bacon, chopped (for a smoky flavor)
  • 2 tablespoons ranch seasoning mix
  • 2 cups mixed vegetables (bell peppers, onions, broccoli)
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)
  • Aluminum foil (heavy-duty)


Instructions

  1. Preheat your grill or oven to 400°F (200°C).
  2. Prepare your chicken by trimming any excess fat and seasoning it with ranch seasoning, salt, and pepper.
  3. Chop the vegetables into bite-sized pieces and toss them in olive oil with a sprinkle of salt.
  4. Lay out sheets of aluminum foil and place a piece of chicken in the center of each.
  5. Top the chicken with chopped beef bacon and seasoned vegetables.
  6. Fold the foil over to create a sealed packet.
  7. Cook on the grill or in the oven for about 30 minutes, or until the chicken reaches 165°F (75°C).
  8. Carefully open the packets and enjoy.
