Description

Bang Bang Chicken Bowl a quick, flavorful, and customizable chicken bowl with a creamy, spicy-sweet bang bang sauce. Perfect for busy weeknights or meal prep!


Ingredients

  • 1 lb chicken breast, sliced (or thighs)
  • 1 tbsp oil
  • Salt & pepper to taste
  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas)
  • 2 cups cooked rice
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 2 tbsp sriracha
  • 1 tsp lime juice
  • Optional toppings: green onions, sesame seeds, peanuts, cilantro


Instructions

  1. Cook rice according to package instructions.
  2. Heat oil in a skillet; season and cook chicken until golden and cooked through.
  3. Add vegetables; sauté 3–4 minutes until tender-crisp.
  4. In a bowl, whisk mayo, sweet chili sauce, sriracha, and lime juice.
  5. Assemble bowls: layer rice, chicken, and veggies, drizzle with sauce, and garnish as desired.

Notes

  • Store leftovers up to 3 days in the fridge.
  • Freeze portions up to 2 months.
