Ingredients
- 1 lb chicken breast, sliced (or thighs)
- 1 tbsp oil
- Salt & pepper to taste
- 2 cups mixed vegetables (bell peppers, broccoli, snap peas)
- 2 cups cooked rice
- ½ cup mayonnaise
- ¼ cup sweet chili sauce
- 2 tbsp sriracha
- 1 tsp lime juice
- Optional toppings: green onions, sesame seeds, peanuts, cilantro
Instructions
- Cook rice according to package instructions.
- Heat oil in a skillet; season and cook chicken until golden and cooked through.
- Add vegetables; sauté 3–4 minutes until tender-crisp.
- In a bowl, whisk mayo, sweet chili sauce, sriracha, and lime juice.
- Assemble bowls: layer rice, chicken, and veggies, drizzle with sauce, and garnish as desired.
