Instructions

  1. Marinate the chicken: In a bowl, combine the chicken with ginger, garlic, and a pinch of salt. Let it sit as you prepare the other ingredients.
  2. Prepare the coating: In a separate bowl, add cornstarch. Dredge each piece of marinated chicken in the cornstarch until fully coated.
  3. Heat the oil: In a large skillet, heat vegetable oil over medium-high.
  4. Fry the chicken: Cook the chicken until golden and cooked through, about 5-7 minutes each side. Drain on paper towels.
  5. Prepare the sauce: In a small bowl, mix together chili sauce and mayonnaise. Adjust to taste.

Notes

For extra crunch, double coat the chicken in cornstarch. Letting the chicken marinate for at least 30 minutes enhances the flavor.
