Description

These bang bang chicken skewers are quick to make and packed with zesty flavors, perfect for gatherings or cozy dinners.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon Sriracha (or to taste)
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Skewers (wooden or metal)
  • Fresh cilantro, for garnish (optional)


Instructions

  1. In a medium bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, lime juice, garlic powder, salt, and pepper to create your bang bang sauce.
  2. Add the chicken pieces and toss in half of the sauce. Allow them to marinate for at least 30 minutes to soak in all that flavor.
  3. Preheat your grill to medium-high heat while the chicken marinates.
  4. Once marinated, thread the chicken pieces onto skewers, ensuring they are nicely packed but not overcrowded.
  5. Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has lovely grill marks.
  6. Serve the skewers with the remaining bang bang sauce for dipping, and garnish with fresh cilantro if desired.

Notes

For extra char, soak wooden skewers in water for about 30 minutes before grilling. Marinating the chicken longer enhances flavor.
