Ingredients
- 1 lb fresh salmon (skinless and cut into bite-sized cubes)
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- 1 cup panko breadcrumbs
- 1 tbsp olive oil or spray for crisping
- ½ cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha (adjust to spice level)
- 1 tsp honey (optional)
- Juice of ½ lime
- 2 cups cooked jasmine rice (or cauliflower rice)
- 1 cup shredded purple cabbage
- 1 avocado (sliced)
- ½ cup shredded carrots
- 2 green onions (sliced)
- Fresh cilantro and sesame seeds for garnish
Instructions
- Preheat Oven or Air Fryer: Set your oven to 400°F (200°C) or preheat your air fryer.
- Season the Salmon: In a bowl, combine garlic powder, smoked paprika, salt, and black pepper. Toss the salmon cubes in this mixture to coat evenly.
- Coat in Breadcrumbs: Place panko breadcrumbs in a shallow dish. Roll each salmon piece in the breadcrumbs until fully coated.
- Bake or Air-Fry: If baking, spread the salmon bites on a parchment-lined baking sheet and lightly drizzle with olive oil. Bake for about 15-20 minutes until golden and crispy. For air frying, cook for about 10-12 minutes, checking for doneness.
- Make the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha (to taste), honey, and lime juice until smooth.
- Assemble the Bowls: Serve the salmon bites atop a bed of rice, then layer with cabbage, avocado, carrots, and green onions. Drizzle with Bang Bang sauce and garnish with cilantro and sesame seeds.
Notes
For extra crunch, consider double-dipping the salmon in the breadcrumb mixture. Ensure the internal temperature of the salmon reaches 145°F (63°C) for food safety.
