Description

Crispy and flavor-packed salmon bites coated in breadcrumbs, served with a delicious Bang Bang sauce. Perfect for gatherings or weeknight dinners.


Ingredients

  • 1 lb fresh salmon (skinless and cut into bite-sized cubes)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil or spray for crisping
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha (adjust to spice level)
  • 1 tsp honey (optional)
  • Juice of ½ lime
  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 avocado (sliced)
  • ½ cup shredded carrots
  • 2 green onions (sliced)
  • Fresh cilantro and sesame seeds for garnish


Instructions

  1. Preheat Oven or Air Fryer: Set your oven to 400°F (200°C) or preheat your air fryer.
  2. Season the Salmon: In a bowl, combine garlic powder, smoked paprika, salt, and black pepper. Toss the salmon cubes in this mixture to coat evenly.
  3. Coat in Breadcrumbs: Place panko breadcrumbs in a shallow dish. Roll each salmon piece in the breadcrumbs until fully coated.
  4. Bake or Air-Fry: If baking, spread the salmon bites on a parchment-lined baking sheet and lightly drizzle with olive oil. Bake for about 15-20 minutes until golden and crispy. For air frying, cook for about 10-12 minutes, checking for doneness.
  5. Make the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha (to taste), honey, and lime juice until smooth.
  6. Assemble the Bowls: Serve the salmon bites atop a bed of rice, then layer with cabbage, avocado, carrots, and green onions. Drizzle with Bang Bang sauce and garnish with cilantro and sesame seeds.

Notes

For extra crunch, consider double-dipping the salmon in the breadcrumb mixture. Ensure the internal temperature of the salmon reaches 145°F (63°C) for food safety.
