Description

These ground turkey rice bowls topped with a delightful bang bang sauce are nutritious and customizable, making them perfect for meal prep.


Ingredients

  • 1 lb ground turkey
  • 2 cups cooked rice (white or brown)
  • 1 cup broccoli florets (fresh or frozen)
  • 1/2 cup diced bell peppers
  • 1/4 cup green onions, chopped
  • 1/4 cup mayo
  • 2 tablespoons sriracha (adjust to taste)
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • Salt and pepper, to taste


Instructions

  1. In a skillet over medium heat, cook the ground turkey until browned, seasoning with salt and pepper.
  2. Add the broccoli and bell peppers to the turkey, cooking until the veggies are tender, about 5 minutes.
  3. While the turkey and vegetables cook, mix mayo, sriracha, honey, and soy sauce in a bowl to create the bang bang sauce.
  4. To serve, place cooked rice in bowls, top with the turkey and veggie mixture, and drizzle with bang bang sauce. Garnish with green onions.

Notes

Add sliced avocado or sesame seeds for added texture. Leftovers can be stored in an airtight container for up to 3 days.
