A refreshing pasta salad that combines the bright flavors of basil and lemon with fresh vegetables, perfect for summer gatherings.
Ingredients
- 12 ounces your favorite pasta (such as fusilli or penne)
- 1 cup cherry tomatoes, halved
- 1 cup fresh basil leaves, chopped
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/4 cup olive oil
- Juice of 1 lemon
- Salt and pepper, to taste
- Grated Parmesan cheese (optional)
Instructions
- Cook the pasta: Boil water in a large pot and add a generous amount of salt. Once boiling, add the pasta and cook according to package instructions. Drain and rinse under cold water to stop the cooking process.
- Prepare the vegetables: While the pasta cooks, chop the cherry tomatoes, cucumber, and red onion. Set aside.
- Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Combine everything: In a large mixing bowl, combine the drained pasta, chopped vegetables, and basil. Pour the dressing over the top and toss gently to coat.
- Serve immediately or chill: If serving right away, mix in some grated Parmesan cheese if desired. Alternatively, let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
Notes
It’s even better if prepared ahead of time. Store leftovers in an airtight container for up to three days.
