Description

Indulge in these BBQ brisket melts featuring tender, smoky beef brisket enveloped in gooey cheese on crispy bread.

Ingredients

  • 3-4 lbs Beef brisket
  • Your favorite BBQ sauce
  • Slices of cheddar or Monterey Jack cheese
  • Thick slices of crusty bread (such as sourdough or ciabatta)
  • Olive oil or butter for grilling
  • Optional: pickled jalapeños or sautéed onions for extra flavor

Instructions

  1. Preheat your oven to 225°F (107°C) for low and slow cooking.
  2. Season the brisket generously with salt and pepper, and optionally add spices like paprika or garlic powder for extra flavor.
  3. Place the brisket in a roasting pan and cover tightly with foil. Cook in the oven for about 8 hours, or until fork-tender.
  4. Remove the brisket and let it rest for at least 30 minutes. Shred or slice the brisket based on your preference.
  5. Preheat a skillet or grill over medium heat.
  6. Butter one side of each slice of bread. On the non-buttered side, layer the shredded brisket and cheese.
  7. Place the sandwich in the skillet, cooking until golden brown and the cheese is melty. Flip carefully and grill the other side.
  8. Serve hot with additional BBQ sauce, if desired.

Notes

Consider marinating the brisket overnight for enhanced flavors. Leftovers can be stored in an airtight container for 3-4 days or frozen for up to three months.
