Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup barbecue sauce (store-bought or homemade)
- 2 medium sweet potatoes, peeled and diced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Sliced green onions, for garnish
- Chopped fresh cilantro, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss diced sweet potatoes with olive oil, salt, and pepper. Arrange them on a baking sheet in a single layer.
- Bake sweet potatoes for about 25 minutes, or until tender and slightly caramelized.
- While the sweet potatoes are roasting, season the chicken breasts with salt and pepper. Grill or pan-cook the chicken over medium heat until fully cooked, about 6-7 minutes per side.
- Coat the cooked chicken in barbecue sauce, ensuring it’s well covered. Let it heat through for a couple of minutes.
- Once everything is ready, slice the chicken and serve it atop the sweet potatoes. Garnish with green onions and cilantro.

Feel free to adjust the amount of barbecue sauce based on your preference. For extra flavor, consider marinating the chicken in barbecue sauce for a few hours.
