Ingredients
- 1 pound boneless, skinless chicken breasts, cut into cubes
- 2 medium sweet potatoes, peeled and diced

- 1 bell pepper, chopped (optional)
- 1 onion, sliced
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat. Add the chicken pieces and season with salt and pepper. Cook until browned, about 5-7 minutes.
- Stir in the onion and bell pepper, cooking until they begin to soften, about 3-4 minutes.
- Add the diced sweet potatoes and pour in the BBQ sauce. Stir well to combine.
- Cover the skillet and reduce heat to low, allowing the mixture to simmer for 20 minutes, or until the sweet potatoes are tender.
