Description

This vibrant one-pan dish combines tender chicken, sweet potatoes, and BBQ sauce for a hearty and comforting meal.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into cubes
  • 2 medium sweet potatoes, peeled and diced
  • 1 cup BBQ sauce (your choice)
  • 1 tablespoon olive oil
  • 1 bell pepper, chopped (optional)
  • 1 onion, sliced
  • Salt and pepper to taste


Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the chicken pieces and season with salt and pepper. Cook until browned, about 5-7 minutes.
  2. Stir in the onion and bell pepper, cooking until they begin to soften, about 3-4 minutes.
  3. Add the diced sweet potatoes and pour in the BBQ sauce. Stir well to combine.
  4. Cover the skillet and reduce heat to low, allowing the mixture to simmer for 20 minutes, or until the sweet potatoes are tender.
  5. Serve hot directly from the skillet for a rustic presentation.

Notes

You can enhance the dish by adding fresh herbs like cilantro or parsley and serve with whole grain bread to soak up the sauce.
