A comforting BBQ Meatloaf drenched in tangy BBQ sauce, perfect for cozy dinners and impressing guests with minimal effort.
Ingredients
- ½ cup plain dried breadcrumbs
- 2 teaspoons Kosher salt
- 1 ½ teaspoons chili powder
- 1 teaspoon black pepper
- 1 teaspoon ground cumin
- ¾ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ cup milk
- 1 large egg, beaten
- 1 tablespoon Worcestershire sauce
- 1 ½ teaspoon unsalted liquid smoke
- 2 pounds 80/20 ground beef
- 1 small yellow onion, finely minced
- ⅔ cup thick, sweet BBQ Sauce (separated)
Instructions
- Preheat your oven to 350°F and line a rimmed sheet pan with nonstick foil.
- In a large bowl, combine the breadcrumbs, salt, chili powder, black pepper, cumin, garlic powder, and onion powder. Mix thoroughly with a fork.
- Add the milk, beaten egg, Worcestershire sauce, and liquid smoke into the mixture, combining it well.
- Incorporate the ground beef and finely minced onion, using your hands to mix until everything is evenly blended.
- Shape the mixture into a narrow loaf and place it on the prepared pan.
- Pour half of the BBQ sauce over the meatloaf and bake for 35 minutes. Remove it from the oven, add the remaining sauce, and bake for an additional 25 minutes.
- Once finished, let the meatloaf rest for about 15 minutes before slicing. Serve warm and enjoy!
Notes
For a crispy topping, sprinkle some breadcrumbs mixed with olive oil on top before baking.
