Description

A comforting BBQ Meatloaf drenched in tangy BBQ sauce, perfect for cozy dinners and impressing guests with minimal effort.


Ingredients

  • ½ cup plain dried breadcrumbs
  • 2 teaspoons Kosher salt
  • 1 ½ teaspoons chili powder
  • 1 teaspoon black pepper
  • 1 teaspoon ground cumin
  • ¾ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ cup milk
  • 1 large egg, beaten
  • 1 tablespoon Worcestershire sauce
  • 1 ½ teaspoon unsalted liquid smoke
  • 2 pounds 80/20 ground beef
  • 1 small yellow onion, finely minced
  • ⅔ cup thick, sweet BBQ Sauce (separated)


Instructions

  1. Preheat your oven to 350°F and line a rimmed sheet pan with nonstick foil.
  2. In a large bowl, combine the breadcrumbs, salt, chili powder, black pepper, cumin, garlic powder, and onion powder. Mix thoroughly with a fork.
  3. Add the milk, beaten egg, Worcestershire sauce, and liquid smoke into the mixture, combining it well.
  4. Incorporate the ground beef and finely minced onion, using your hands to mix until everything is evenly blended.
  5. Shape the mixture into a narrow loaf and place it on the prepared pan.
  6. Pour half of the BBQ sauce over the meatloaf and bake for 35 minutes. Remove it from the oven, add the remaining sauce, and bake for an additional 25 minutes.
  7. Once finished, let the meatloaf rest for about 15 minutes before slicing. Serve warm and enjoy!

Notes

For a crispy topping, sprinkle some breadcrumbs mixed with olive oil on top before baking.
