Ingredients
- 1 lb ground beef
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 8 flour tortillas
- Oil for frying
- Salt and pepper to taste
Instructions
- In a skillet, heat oil over medium heat. Add onion and garlic, cooking until softened.
- Stir in ground beef, seasoning with cumin, chili powder, salt, and pepper. Cook until browned.
- Remove from heat and stir in the shredded cheese until melted.
- Place a generous scoop of the beef mixture in each tortilla, folding and rolling them tightly.
- Heat oil in the skillet and fry each chimichanga until golden brown on all sides.
- Drain on paper towels before serving.
Notes
Serve with guacamole, sour cream, or pico de gallo. Fresh cilantro can enhance flavor.
