Ingredients
- 1 lb lean beef (sirloin or flank), cut into thin strips
- 1 cup bell peppers, mixed colors, sliced
- 1 cup carrots, thinly sliced
- 1 cup broccoli florets
- 1/2 cup green onions, chopped
- 1/4 cup soy sauce
- 1 tablespoon cornstarch
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons oil (vegetable or sesame)
Instructions
- Prepare all your vegetables by washing, peeling, and cutting them into uniform pieces.
- Slice the beef into thin strips against the grain for tenderness.
- Heat oil in a large skillet or wok over medium-high heat. Add the beef, letting it sear without stirring for a minute to develop a nice crust.
- Stir in the minced garlic and ginger, cooking until fragrant.
- Add the carrots and broccoli to the pan. Stir-fry for a couple of minutes until they start to soften.
- Toss in the bell peppers and green onions, cooking briefly until everything is vibrant and tender-crisp.
- Pour in the soy sauce mixed with cornstarch, stirring well to coat all the ingredients.
- Cook for another minute or two until the sauce thickens slightly. Serve immediately!
