Description

A creamy and savory Beer Cheese Dip infused with smoky bacon, perfect for gatherings and game nights.


Ingredients

  • 3 pieces bacon, diced
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup lager beer
  • ½ cup whole milk
  • 2 cups shredded white cheddar cheese
  • 1 cup shredded sharp yellow cheddar
  • 4 ounces cream cheese
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 tablespoon freshly chopped chives
  • Soft pretzels or soft pretzel bites
  • Kielbasa sausage, grilled and sliced
  • Sturdy corn chips or baguette slices


Instructions

  1. In a medium-sized cast iron pan, cook the diced bacon over medium heat until crispy. Remove and reserve the bacon pieces, discarding the fat.
  2. Melt the butter in the same pan and stir in the flour. Mix for about three minutes to activate the roux.
  3. Pour in the lager and stir continuously, simmering for two minutes, then add the milk and simmer for another two minutes.
  4. Reduce heat to low and add the cream cheese and shredded cheeses, stirring until melted and combined.
  5. Mix in the Dijon, Worcestershire, onion powder, garlic powder, and chives.
  6. Top with the crispy bacon and serve immediately, or transfer to a warming pot to keep hot.

Notes

Store leftovers in an airtight container for up to three days. Reheat gently with a splash of milk if necessary.
