A vibrant salad combining tender chicken and fresh vegetables with a zesty dressing.


Ingredients

  • Chicken breast (grilled or roasted)
  • Mixed salad greens
  • Red bell pepper, thinly sliced
  • Carrots, julienned
  • Cucumber, diced
  • Green onions, chopped
  • Sesame seeds
  • Soy sauce
  • Rice vinegar
  • Fresh ginger, minced
  • Honey or maple syrup
  • Olive oil


Instructions

  1. Prepare the chicken by grilling or roasting until cooked through. Let it cool, then slice into strips.
  2. In a large bowl, combine the salad greens, bell pepper, carrots, cucumber, and green onions.
  3. In a small bowl, whisk together soy sauce, rice vinegar, minced ginger, honey (or maple syrup), and olive oil to create the dressing.
  4. Pour the dressing over the salad and toss gently to coat all ingredients evenly.
