Ingredients
- 1 pound of chicken breasts
- 1 cup of breadcrumbs (or gluten-free alternative)
- 1 cup of buttermilk
- Salt and pepper to taste
- ½ cup of mayonnaise
- 2 tablespoons of sweet chili sauce
- 1 tablespoon of Sriracha (adjust for heat)
- Green onions for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken with salt and pepper, then dip it into the buttermilk, ensuring it’s fully coated.
- Roll the coated chicken in breadcrumbs until evenly covered.
- Place the chicken on a baking sheet and bake for 25-30 minutes, or until cooked through and golden brown.
- In a bowl, whisk together mayonnaise, sweet chili sauce, and Sriracha to create the sauce.
- Once the chicken is done, drizzle the sauce over the top.
- Serve garnished with chopped green onions.
Notes
For a crunchier texture, try broiling the chicken for the last few minutes of baking. You can also substitute chicken thighs for juicier meat.
