Description

A savory casserole featuring crispy hashbrowns, beef bacon, and cheese, perfect for breakfasts and brunch gatherings.


Ingredients

  • 1 bag frozen hashbrowns (about 30 oz)
  • 1 cup beef bacon, cooked and crumbled
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 small onion, diced
  • 4 large eggs
  • 1 cup milk
  • Salt and pepper to taste
  • Optional: diced bell peppers or other vegetables


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine hashbrowns, beef bacon, half of the cheese, onion, salt, and pepper.
  3. In another bowl, whisk together eggs and milk until well mixed. Pour this mixture over the hashbrown mix and stir gently to combine.
  4. Transfer the mixture into a greased baking dish. Spread it evenly.
  5. Top with the remaining cheese.
  6. Bake for 45 minutes or until the casserole is bubbly and the cheese is nicely browned.
  7. Let it cool for a few minutes before serving.

Notes

For an extra crispy topping, broil the casserole for the last few minutes of cooking. Experiment with seasoning for extra flavor.
