Ingredients
- 1 bag frozen hashbrowns (about 30 oz)
- 1 cup beef bacon, cooked and crumbled
- 2 cups shredded cheese (cheddar or your choice)
- 1 small onion, diced
- 4 large eggs
- 1 cup milk
- Salt and pepper to taste
- Optional: diced bell peppers or other vegetables
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine hashbrowns, beef bacon, half of the cheese, onion, salt, and pepper.
- In another bowl, whisk together eggs and milk until well mixed. Pour this mixture over the hashbrown mix and stir gently to combine.
- Transfer the mixture into a greased baking dish. Spread it evenly.
- Top with the remaining cheese.
- Bake for 45 minutes or until the casserole is bubbly and the cheese is nicely browned.
- Let it cool for a few minutes before serving.
Notes
For an extra crispy topping, broil the casserole for the last few minutes of cooking. Experiment with seasoning for extra flavor.
