Description

A comforting dish featuring tender chicken, flavorful rice, and a creamy sauce.


Ingredients

  • 2 cups cooked rice (brown or white)
  • 1 pound chicken breast, diced
  • 1 cup chicken broth (low-sodium recommended)
  • 1 cup heavy cream or non-dairy alternative
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas (or any preferred vegetable)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh herbs like parsley for garnish (optional)


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the diced chicken and cook until browned, approximately 5–7 minutes. Season with salt and pepper.
  2. Incorporate the chopped onion and garlic into the skillet, cooking until the onion is translucent (about 3–4 minutes).
  3. Pour in the chicken broth, scraping up any brown bits from the bottom of the skillet for extra flavor.
  4. Reduce heat, then stir in the heavy cream and let it simmer for about 5 minutes to thicken slightly.
  5. Add the cooked rice and frozen peas, mixing well to ensure everything is coated. Simmer for an additional 5 minutes until heated through.
  6. Remove from heat and garnish with fresh herbs if desired, then serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave.
