Ingredients
- 2 cups cooked rice (brown or white)
- 1 pound chicken breast, diced
- 1 cup chicken broth (low-sodium recommended)
- 1 cup heavy cream or non-dairy alternative
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup frozen peas (or any preferred vegetable)
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh herbs like parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the diced chicken and cook until browned, approximately 5–7 minutes. Season with salt and pepper.
- Incorporate the chopped onion and garlic into the skillet, cooking until the onion is translucent (about 3–4 minutes).
- Pour in the chicken broth, scraping up any brown bits from the bottom of the skillet for extra flavor.
- Reduce heat, then stir in the heavy cream and let it simmer for about 5 minutes to thicken slightly.
- Add the cooked rice and frozen peas, mixing well to ensure everything is coated. Simmer for an additional 5 minutes until heated through.
- Remove from heat and garnish with fresh herbs if desired, then serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave.
