- 1 pound dried black-eyed peas
- 6 cups chicken broth

- 1/4 teaspoon black pepper
- 1/4 cup heavy cream
- 2 tablespoons butter
Instructions
- Rinse the black-eyed peas under cold water to remove any dirt or debris.
- In a large pot, combine the rinsed peas, chicken broth, onion, celery, bell pepper, garlic, salt, and black pepper.
- Bring the mixture to a boil over medium-high heat.
- Once boiling, reduce the heat to low and let it simmer for 45 to 60 minutes until the peas are tender.
- Stir in the heavy cream and butter, cooking for an additional 5 minutes until heated through and creamy.
- Taste the dish and adjust seasoning if necessary.
Notes
For a vegetarian option, substitute chicken broth with vegetable broth and use dairy-free cream. Soaking black-eyed peas can improve texture and reduce cooking time.
