  • 1 pound dried black-eyed peas
  • 6 cups chicken broth
  • 1/2 cup chopped yellow onion
  • 1/4 cup chopped celery
  • 1/4 cup chopped green bell pepper
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup heavy cream
  • 2 tablespoons butter


Instructions

  1. Rinse the black-eyed peas under cold water to remove any dirt or debris.
  2. In a large pot, combine the rinsed peas, chicken broth, onion, celery, bell pepper, garlic, salt, and black pepper.
  3. Bring the mixture to a boil over medium-high heat.
  4. Once boiling, reduce the heat to low and let it simmer for 45 to 60 minutes until the peas are tender.
  5. Stir in the heavy cream and butter, cooking for an additional 5 minutes until heated through and creamy.
  6. Taste the dish and adjust seasoning if necessary.

Notes

For a vegetarian option, substitute chicken broth with vegetable broth and use dairy-free cream. Soaking black-eyed peas can improve texture and reduce cooking time.
