Ingredients
- 2 pounds boneless, skinless chicken thighs
- 1 cup chicken broth
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup bourbon
- 1 tablespoon apple cider vinegar
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 teaspoon red pepper flakes (adjust to taste)
- Salt and pepper to taste
- Green onions for garnish (optional)
Instructions
- Begin by mixing the chicken broth, soy sauce, brown sugar, bourbon, apple cider vinegar, garlic, ginger, and red pepper flakes in a bowl. This will be your sauce.
- Season your chicken thighs with salt and pepper, then place them in the crock pot.
- Pour the sauce over the chicken, making sure to coat each piece well.
- Cover and cook on low for about 360 minutes, or until the chicken is tender and easily shreds.
- Once cooked, shred the chicken directly in the pot using two forks and mix it into the sauce.
- Serve hot, garnished with chopped green onions if desired.
Notes
For those avoiding bourbon, feel free to substitute with apple juice for sweetness.
