Description

Tender chicken thighs slow-cooked in a rich bourbon sauce, perfect for a comforting meal.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup chicken broth
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup bourbon
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • Green onions for garnish (optional)


Instructions

  1. Begin by mixing the chicken broth, soy sauce, brown sugar, bourbon, apple cider vinegar, garlic, ginger, and red pepper flakes in a bowl. This will be your sauce.
  2. Season your chicken thighs with salt and pepper, then place them in the crock pot.
  3. Pour the sauce over the chicken, making sure to coat each piece well.
  4. Cover and cook on low for about 360 minutes, or until the chicken is tender and easily shreds.
  5. Once cooked, shred the chicken directly in the pot using two forks and mix it into the sauce.
  6. Serve hot, garnished with chopped green onions if desired.

Notes

For those avoiding bourbon, feel free to substitute with apple juice for sweetness.
