Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) green chiles, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 cup heavy cream
- Salt and pepper to taste
- Optional Toppings: sour cream, cilantro, cheese
Instructions
- In your crockpot, combine the chicken breasts, white beans, green chiles, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper.
- Cover and cook on low for 6-8 hours, or for a quicker option, set to high for 3-4 hours.
- About 30 minutes before you’re ready to serve, shred the chicken using two forks and stir in the heavy cream to create a luxurious texture.
- Serve hot with your choice of toppings, and enjoy!
