Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) green chiles, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Optional Toppings: sour cream, cilantro, cheese


Instructions

  1. In your crockpot, combine the chicken breasts, white beans, green chiles, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper.
  2. Cover and cook on low for 6-8 hours, or for a quicker option, set to high for 3-4 hours.
  3. About 30 minutes before you’re ready to serve, shred the chicken using two forks and stir in the heavy cream to create a luxurious texture.
  4. Serve hot with your choice of toppings, and enjoy!
