Ingredients
- 1.5 pounds beef (flank steak or sirloin)
- 1 onion, sliced
- 2 bell peppers, sliced
- 3 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Juice of 1 lime
- Tortillas, for serving
- Optional toppings: sour cream, salsa, cilantro, avocado
Instructions
- Prepare the beef: Slice the beef against the grain into thin strips.
- Combine ingredients: In your crockpot, layer the sliced beef, onion, and bell peppers. Sprinkle the minced garlic, chili powder, cumin, paprika, salt, and black pepper over the top.
- Add acidity: Squeeze the lime juice over everything.
- Cook: Set your slow cooker to low and let it cook for 6-8 hours, or on high for about 4 hours.
- Serve: Once done, stir everything before serving with warm tortillas and your favorite toppings.
