Description

A flavorful and easy meal featuring tender beef, vibrant bell peppers, and zesty spices, all cooked in a slow cooker.


Ingredients

  • 1.5 pounds beef (flank steak or sirloin)
  • 1 onion, sliced
  • 2 bell peppers, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Juice of 1 lime
  • Tortillas, for serving
  • Optional toppings: sour cream, salsa, cilantro, avocado


Instructions

  1. Prepare the beef: Slice the beef against the grain into thin strips.
  2. Combine ingredients: In your crockpot, layer the sliced beef, onion, and bell peppers. Sprinkle the minced garlic, chili powder, cumin, paprika, salt, and black pepper over the top.
  3. Add acidity: Squeeze the lime juice over everything.
  4. Cook: Set your slow cooker to low and let it cook for 6-8 hours, or on high for about 4 hours.
  5. Serve: Once done, stir everything before serving with warm tortillas and your favorite toppings.
