Ingredients

  • 7 large eggs
  • 2 tablespoons butter
  • 2 cloves garlic, sliced thin
  • 5 oz baby spinach
  • 1/3 cup mayo
  • 1 tablespoon mustard
  • 1/2 lemon (juice)
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon hot sauce
  • 2 tablespoons dehydrated potato flakes
  • 1 red Fresno chili pepper, minced
  • 1 yellow bell pepper, cut into small stars
  • Parmesan cheese (for garnish)


Instructions

  1. Hard boil the eggs: Place the eggs in a single layer in a saucepan, cover with water, and bring to a boil. Once boiling, cover and remove from heat. Let sit for 10-12 minutes. Transfer to an ice bath to cool, then peel.
  2. Sauté the garlic and spinach: In a skillet, melt the butter over medium heat. Add the sliced garlic and sauté until fragrant. Incorporate the spinach, cooking until it wilts. Remove from heat and set aside.
  3. Prepare the filling: In a mixing bowl, combine the egg yolks, mayo, mustard, lemon juice, smoked paprika, hot sauce, and potato flakes. Mash until creamy and well-blended.
  4. Combine and season: Gently fold the sautéed spinach into the yolk mixture. Taste and adjust with salt and pepper.
  5. Pipe the filling: Using a piping bag or spoon, refill the egg whites with the green filling.
  6. Decorate: Top each egg with minced Fresno chili and place star-shaped pieces of yellow bell pepper to resemble Christmas trees.
  7. Garnish: Sprinkle with Parmesan cheese for an extra touch of flavor. Chill until ready to serve.

Notes

These eggs can be made a day in advance. Add toppings just before serving for the best presentation.
