Ingredients
- 1 lb clams
- 1 lb mussels
- 1 lb cod fillets, cut into chunks
- 1 lb shrimp, peeled and deveined
- 1 lb scallops
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups seafood stock
- 1 cup white wine
- 2 tablespoons olive oil
- 1 teaspoon red pepper flakes
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Crusty bread (for serving)
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic; sauté until translucent.
- Stir in the red pepper flakes and oregano, cooking for another minute to release their flavors.
- Pour in the white wine, allowing it to simmer for 2-3 minutes to cook off some of the alcohol.
- Mix in the crushed tomatoes and seafood stock, bringing the mixture to a boil. Once boiling, reduce the heat and simmer gently.
- Add the clams, mussels, cod, shrimp, and scallops. Cover the pot and let it simmer until the clams and mussels open up, about 10-15 minutes.
- Season the cioppino with salt and pepper to taste.
- Serve hot, garnished with fresh parsley, and don’t forget the crusty bread on the side.
