A filling and flavorful breakfast burrito packed with eggs, cheese, and your choice of fillings.
Ingredients
- Flour tortillas (8-10 inches)
- 6 large eggs
- Shredded cheese (cheddar or your favorite)
- 1 cup bell peppers, diced
- 1 small onion, diced
- 1 cup spinach (optional)
- 1 cup cooked ground beef
- Salsa (for serving)
- Olive oil or butter (for cooking)
- Salt and pepper (to taste)
Instructions
- In a skillet, heat olive oil or butter over medium heat. Add onions and bell peppers, sautéing until they are tender.
- Incorporate cooked ground beef with the vegetables, seasoning with salt and pepper.
- In a separate bowl, whisk the eggs and pour them into the skillet. Scramble until fully cooked.
- If using spinach, toss it in just before the eggs finish cooking until wilted.
- Remove from heat and sprinkle cheese over the mixture.
- Warm the flour tortillas in a pan or microwave until pliable.
- Spoon the egg and beef mixture onto the center of each tortilla, then fold in the sides and roll tightly.
- Optional: Toast the burrito seam-side down in the skillet for 1-2 minutes for a crispy finish.
Notes
Feel free to swap out cheese or vegetables based on your preferences. Store leftovers wrapped in foil or plastic wrap.
