Description

A filling and flavorful breakfast burrito packed with eggs, cheese, and your choice of fillings.


Ingredients

  • Flour tortillas (8-10 inches)
  • 6 large eggs
  • Shredded cheese (cheddar or your favorite)
  • 1 cup bell peppers, diced
  • 1 small onion, diced
  • 1 cup spinach (optional)
  • 1 cup cooked ground beef
  • Salsa (for serving)
  • Olive oil or butter (for cooking)
  • Salt and pepper (to taste)


Instructions

  1. In a skillet, heat olive oil or butter over medium heat. Add onions and bell peppers, sautéing until they are tender.
  2. Incorporate cooked ground beef with the vegetables, seasoning with salt and pepper.
  3. In a separate bowl, whisk the eggs and pour them into the skillet. Scramble until fully cooked.
  4. If using spinach, toss it in just before the eggs finish cooking until wilted.
  5. Remove from heat and sprinkle cheese over the mixture.
  6. Warm the flour tortillas in a pan or microwave until pliable.
  7. Spoon the egg and beef mixture onto the center of each tortilla, then fold in the sides and roll tightly.
  8. Optional: Toast the burrito seam-side down in the skillet for 1-2 minutes for a crispy finish.

Notes

Feel free to swap out cheese or vegetables based on your preferences. Store leftovers wrapped in foil or plastic wrap.
