Ingredients
- 8 boneless, skinless chicken thighs
- 2 tbsp cornflour (cornstarch)
- ½ tsp salt
- ½ tsp pepper
- 2 tbsp vegetable oil
- 1 tbsp unsalted butter
- 4 cloves garlic, minced
- 110g honey (1/3 cup)
- 80ml chicken stock (1/3 cup)
- 1 tbsp rice vinegar
- 1 tbsp light soy sauce
- 1 tbsp fresh parsley, finely chopped
- ½ tsp chilli flakes
- Boiled rice (for serving)
Instructions
- Pat the chicken thighs dry and chop into bite-sized pieces. Season with salt and pepper.
- Whisk together honey, chicken stock, rice vinegar, light soy sauce, minced garlic, and chili flakes in a medium bowl.
- Combine cornflour with cold water to create a smooth slurry; set aside.
- Heat vegetable oil and butter in a skillet over medium-high heat and sear the chicken for 3-4 minutes per side until golden brown. Remove and set aside.
- Lower heat to medium-low and add the honey garlic sauce mixture to the skillet, bringing it to a gentle simmer.
- Re-whisk the cornflour slurry and pour it into the sauce, stirring constantly until it thickens (1-2 minutes).
- Return the chicken to the skillet, toss in the sauce, and let it simmer for an additional 2-3 minutes.
- Check for doneness, garnish with parsley, and serve with boiled rice.
Notes
For substitutions, chicken thighs can be swapped for breasts and honey can be replaced with agave syrup. Consider adding vegetables for a nutritious twist.
