Ingredients
- 4 large potatoes, diced
- 1 onion, chopped
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 4 slices bacon, cooked and crumbled
- Salt and pepper to taste
- Green onions, chopped (for garnish)
Instructions
- In a large pot, cook the chopped onion over medium heat until translucent.
- Add the diced potatoes and pour in the broth. Bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 15 minutes.
- For a thicker consistency, mash a portion of the potatoes or leave them whole for chunkier soup.
- Stir in the heavy cream and cheddar cheese, seasoning with salt and pepper to taste.
- Top each bowl with crumbled bacon and chopped green onions before serving.

For lighter options, substitute half the cream with milk or use turkey bacon.
