Description

A creamy, hearty bowl of loaded potato soup that’s perfect for chilly days and gatherings.


Ingredients

  • 4 large potatoes, diced
  • 1 onion, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)


Instructions

  1. In a large pot, cook the chopped onion over medium heat until translucent.
  2. Add the diced potatoes and pour in the broth. Bring to a boil.
  3. Reduce heat and simmer until potatoes are tender, about 15 minutes.
  4. For a thicker consistency, mash a portion of the potatoes or leave them whole for chunkier soup.
  5. Stir in the heavy cream and cheddar cheese, seasoning with salt and pepper to taste.
  6. Top each bowl with crumbled bacon and chopped green onions before serving.

Notes

For lighter options, substitute half the cream with milk or use turkey bacon.
