Description

A comforting and hearty stew made with black-eyed peas and smoked sausage, perfect for winter meals and New Year’s celebrations.


Ingredients

  • 1 can black-eyed peas, drained and rinsed
  • 1 lb smoked sausage, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 4 cups chicken broth
  • 1 tsp Cajun seasoning
  • Salt and pepper to taste
  • 1 bay leaf
  • Fresh parsley for garnish


Instructions

  1. Heat a large pot over medium heat. Sauté the chopped onion, minced garlic, and bell pepper until tender and fragrant, about 3-5 minutes.
  2. Add the sliced sausage and brown slightly for added flavor.
  3. Stir in the rinsed black-eyed peas, chicken broth, Cajun seasoning, and the bay leaf.
  4. Bring the mixture to a boil, then reduce heat and let it simmer for 30 minutes.
  5. Season with salt and pepper to taste before removing the bay leaf.
  6. Serve hot, garnished with freshly chopped parsley.

Notes

For a vegetarian twist, omit the smoked sausage and use vegetable broth. This stew pairs well with cornbread, salad, or grains like rice or quinoa.
