A comforting and hearty stew made with black-eyed peas and smoked sausage, perfect for winter meals and New Year’s celebrations.
Ingredients
- 1 can black-eyed peas, drained and rinsed
- 1 lb smoked sausage, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 4 cups chicken broth
- 1 tsp Cajun seasoning
- Salt and pepper to taste
- 1 bay leaf
- Fresh parsley for garnish
Instructions
- Heat a large pot over medium heat. Sauté the chopped onion, minced garlic, and bell pepper until tender and fragrant, about 3-5 minutes.
- Add the sliced sausage and brown slightly for added flavor.
- Stir in the rinsed black-eyed peas, chicken broth, Cajun seasoning, and the bay leaf.
- Bring the mixture to a boil, then reduce heat and let it simmer for 30 minutes.
- Season with salt and pepper to taste before removing the bay leaf.
- Serve hot, garnished with freshly chopped parsley.
Notes
For a vegetarian twist, omit the smoked sausage and use vegetable broth. This stew pairs well with cornbread, salad, or grains like rice or quinoa.
