Description
A comforting dish of black-eyed peas simmered in a slow cooker, perfect for gatherings or a hearty meal any day.
Ingredients
- 1 pound dried black-eyed peas
- 4 cups water or vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 bay leaf
- Optional: diced carrots, celery, or ham for flavor enhancement
Instructions
- Rinse the black-eyed peas under cold water and pick out any debris.
- In your slow cooker, combine the rinsed peas, water or broth, chopped onion, minced garlic, salt, black pepper, smoked paprika, and bay leaf.
- Add optional diced carrots, celery, or ham if desired.
- Cover and set the slow cooker to low for 6-8 hours or high for 3-4 hours until peas are tender.
- Remove the bay leaf before serving and enjoy your dish of black-eyed peas!
Notes
Soak the dried peas overnight to reduce cooking time. For a smoky depth, add a piece of smoked turkey or sausage.
