Description

A comforting dish of black-eyed peas simmered in a slow cooker, perfect for gatherings or a hearty meal any day.


Ingredients

  • 1 pound dried black-eyed peas
  • 4 cups water or vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 bay leaf
  • Optional: diced carrots, celery, or ham for flavor enhancement


Instructions

  1. Rinse the black-eyed peas under cold water and pick out any debris.
  2. In your slow cooker, combine the rinsed peas, water or broth, chopped onion, minced garlic, salt, black pepper, smoked paprika, and bay leaf.
  3. Add optional diced carrots, celery, or ham if desired.
  4. Cover and set the slow cooker to low for 6-8 hours or high for 3-4 hours until peas are tender.
  5. Remove the bay leaf before serving and enjoy your dish of black-eyed peas!

Notes

Soak the dried peas overnight to reduce cooking time. For a smoky depth, add a piece of smoked turkey or sausage.
