Description
A hearty and nutritious dish of black-eyed peas simmered with vegetables, often served for good luck.
Ingredients
- 1 cup dried black-eyed peas
- 4 cups water or broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1 bay leaf
- Optional: cooked ham hock or smoked sausage
Instructions
- Rinse the black-eyed peas under cold water, discarding any debris or discolored peas.
- In a large pot, combine the rinsed black-eyed peas, water or broth, onion, garlic, bell pepper, salt, pepper, paprika, and bay leaf.
- Heat the mixture over medium-high until it starts to boil.
- Reduce the heat to low and cover the pot. Let it simmer for about one hour or until the peas are tender.
- If using a ham hock or smoked sausage, add during the last 15 minutes of cooking.
- Remove the bay leaf before serving.
Notes
Consider pairing with cornbread, rice, or greens. Leftovers can be stored in the refrigerator or frozen for long-term storage.
