Description

A hearty and nutritious dish of black-eyed peas simmered with vegetables, often served for good luck.


Ingredients

  • 1 cup dried black-eyed peas
  • 4 cups water or broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 bay leaf
  • Optional: cooked ham hock or smoked sausage


Instructions

  1. Rinse the black-eyed peas under cold water, discarding any debris or discolored peas.
  2. In a large pot, combine the rinsed black-eyed peas, water or broth, onion, garlic, bell pepper, salt, pepper, paprika, and bay leaf.
  3. Heat the mixture over medium-high until it starts to boil.
  4. Reduce the heat to low and cover the pot. Let it simmer for about one hour or until the peas are tender.
  5. If using a ham hock or smoked sausage, add during the last 15 minutes of cooking.
  6. Remove the bay leaf before serving.

Notes

Consider pairing with cornbread, rice, or greens. Leftovers can be stored in the refrigerator or frozen for long-term storage.
