Description
Delightful twists of puff pastry filled with a blend of sweet blackberries and creamy goat cheese, perfect for any occasion.
Ingredients
- 1 package of puff pastry (2 sheets)
- 2 cups blackberries
- 1/2 cup water
- 1 Tbsp. lemon juice
- 3/4 cup sugar
- 8 oz. goat cheese
- Zest of 2 lemons
- 4 tsp. raw sugar
- 2 tsp. fresh thyme (minced)
- 1 egg
Instructions
- In a small saucepan, combine blackberries, water, lemon juice, and sugar. Bring to a boil, then reduce heat and let simmer for 20-30 minutes, smashing berries with a wooden spoon.
- Let the jam cool at room temperature.
- Take the puff pastry out of the freezer and thaw for 20-25 minutes at room temperature.
- On a floured surface, roll out one sheet of puff pastry and crumble half of the goat cheese evenly over it, followed by half of the cooled jam.
- Cut the pastry into 12 horizontal strips, each around 1 inch wide, and fold each strip in half lengthwise.
- Twist each strip in opposite directions while stretching gently, then place on a parchment-lined baking sheet.
- Preheat your oven to 400°F (200°C). Mix lemon zest, raw sugar, and minced thyme in a small bowl.
- Combine the egg with 1 tablespoon of water and brush the twists with the egg wash. Sprinkle the lemon-thyme sugar mixture over the twists.
- Bake for 16-18 minutes until golden brown, then let cool to room temperature before serving.
Notes
You can substitute fresh blackberries with frozen ones, and swap goat cheese for cream cheese for a milder flavor. Store leftovers in an airtight container for up to three days.
