Description

Delightful twists of puff pastry filled with a blend of sweet blackberries and creamy goat cheese, perfect for any occasion.


Ingredients

  • 1 package of puff pastry (2 sheets)
  • 2 cups blackberries
  • 1/2 cup water
  • 1 Tbsp. lemon juice
  • 3/4 cup sugar
  • 8 oz. goat cheese
  • Zest of 2 lemons
  • 4 tsp. raw sugar
  • 2 tsp. fresh thyme (minced)
  • 1 egg


Instructions

  1. In a small saucepan, combine blackberries, water, lemon juice, and sugar. Bring to a boil, then reduce heat and let simmer for 20-30 minutes, smashing berries with a wooden spoon.
  2. Let the jam cool at room temperature.
  3. Take the puff pastry out of the freezer and thaw for 20-25 minutes at room temperature.
  4. On a floured surface, roll out one sheet of puff pastry and crumble half of the goat cheese evenly over it, followed by half of the cooled jam.
  5. Cut the pastry into 12 horizontal strips, each around 1 inch wide, and fold each strip in half lengthwise.
  6. Twist each strip in opposite directions while stretching gently, then place on a parchment-lined baking sheet.
  7. Preheat your oven to 400°F (200°C). Mix lemon zest, raw sugar, and minced thyme in a small bowl.
  8. Combine the egg with 1 tablespoon of water and brush the twists with the egg wash. Sprinkle the lemon-thyme sugar mixture over the twists.
  9. Bake for 16-18 minutes until golden brown, then let cool to room temperature before serving.

Notes

You can substitute fresh blackberries with frozen ones, and swap goat cheese for cream cheese for a milder flavor. Store leftovers in an airtight container for up to three days.
