Description

A delicious blend of smoky grilled kielbasa and comforting tortellini, perfect for gatherings or weeknight dinners.


Ingredients

  • 1 pound kielbasa, sliced into rounds
  • 12 ounces tortellini (fresh or frozen)
  • 1 bell pepper, diced (any color)
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your grill to medium heat.
  2. Cook the tortellini in a large pot of boiling salted water according to package directions until al dente. Drain and set aside.
  3. Toss the sliced kielbasa with olive oil, garlic powder, Italian seasoning, salt, and pepper.
  4. Place the kielbasa on the preheated grill and cook for about 6-8 minutes, turning occasionally, until it’s nicely browned and heated through.
  5. Combine the cooked tortellini, grilled kielbasa, diced bell pepper, and cherry tomatoes in a large bowl. Toss gently to combine.
  6. Garnish with fresh parsley before serving.

Notes

Feel free to switch up the vegetables based on what you have at home. Zucchini or spinach work beautifully too!
