A delicious blend of smoky grilled kielbasa and comforting tortellini, perfect for gatherings or weeknight dinners.
Ingredients
- 1 pound kielbasa, sliced into rounds
- 12 ounces tortellini (fresh or frozen)
- 1 bell pepper, diced (any color)
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your grill to medium heat.
- Cook the tortellini in a large pot of boiling salted water according to package directions until al dente. Drain and set aside.
- Toss the sliced kielbasa with olive oil, garlic powder, Italian seasoning, salt, and pepper.
- Place the kielbasa on the preheated grill and cook for about 6-8 minutes, turning occasionally, until it’s nicely browned and heated through.
- Combine the cooked tortellini, grilled kielbasa, diced bell pepper, and cherry tomatoes in a large bowl. Toss gently to combine.
- Garnish with fresh parsley before serving.
Notes
Feel free to switch up the vegetables based on what you have at home. Zucchini or spinach work beautifully too!
