Description
A warm and comforting baked breakfast treat made with rolled oats, peanut butter, and chocolate.
Ingredients
- 1 cup rolled oats
- 1 medium ripe banana, mashed
- 1 cup milk of choice (almond or oat milk works well)
- 1/4 cup peanut butter (or creamy nut butter of your choice)
- 2 tablespoons cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- Maple syrup (optional, for sweetness)
- Pinch of salt
- Mini chocolate chips (for topping, optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish lightly.
- In a blender, combine rolled oats, mashed banana, milk, peanut butter, cocoa powder, baking powder, vanilla extract, and salt. Blend until smooth.
- If desired, add maple syrup to the blender and mix briefly.
- Pour the mixture into the prepared baking dish and top with chocolate chips if desired.
- Bake for 25-30 minutes, or until edges brown and a toothpick inserted in the center comes out clean.
- Allow to cool slightly before serving.
Notes
For a creamier texture, soak oats in milk overnight or use a higher-fat milk alternative. Feel free to experiment with various nut butters or add a scoop of protein powder.
