Description

A delightful combination of oats, fresh blueberries, and zesty lemon, perfect for busy mornings. These overnight oats are nutritious, satisfying, and can be prepared in advance.


Ingredients

  • 1 cup rolled oats
  • 2 cups milk or non-dairy alternative (almond or oat milk)
  • 1 tablespoon chia seeds
  • 1 cup blueberries (fresh or frozen)
  • 1 tablespoon maple syrup or honey (adjust to taste)
  • Zest and juice of 1 lemon
  • A pinch of salt


Instructions

  1. In a mixing bowl, combine rolled oats, chia seeds, and salt.
  2. Add the milk and stir until everything is well incorporated.
  3. Mix in the lemon zest, juice, and maple syrup or honey.
  4. Gently fold in the blueberries.
  5. Transfer the mixture into individual jars or storage containers.
  6. Cover and refrigerate overnight (or at least 6 hours).
  7. Stir well before serving; top with additional blueberries and a sprinkle of lemon zest if desired.

Notes
