Description

Juicy and flavorful roasted chicken thighs with a crispy skin, perfect for any meal.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 2 teaspoons garlic (fresh or powdered)
  • Fresh herbs (such as rosemary or thyme)
  • Optional: zest and juice of 1 lemon or lime


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels, then drizzle with olive oil.
  3. Season generously with salt, pepper, and garlic.
  4. Rub fresh herbs into the chicken for added flavor.
  5. Place the thighs skin-side up on a baking sheet.
  6. Roast in the oven for about 35 minutes, or until the skin is crispy and a meat thermometer reads 165°F (75°C).
  7. Let it rest for a few minutes before serving to retain moisture.

Notes

Allow the chicken to come to room temperature before cooking for even cooking and better texture. Use a meat thermometer to avoid overcooking.
