Ingredients
- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
- 2 teaspoons garlic (fresh or powdered)
- Fresh herbs (such as rosemary or thyme)
- Optional: zest and juice of 1 lemon or lime
Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken thighs dry with paper towels, then drizzle with olive oil.
- Season generously with salt, pepper, and garlic.
- Rub fresh herbs into the chicken for added flavor.
- Place the thighs skin-side up on a baking sheet.
- Roast in the oven for about 35 minutes, or until the skin is crispy and a meat thermometer reads 165°F (75°C).
- Let it rest for a few minutes before serving to retain moisture.
