Description

A creamy pasta dish infused with bold Cajun seasoning, perfect for busy weeknights and family gatherings.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bell pepper, sliced
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes with juices
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 8 oz penne pasta
  • Fresh parsley, chopped, for garnish


Instructions

  1. Season the chicken with olive oil and spices, then rub to coat evenly.
  2. In a skillet over medium heat, sear the chicken for 2-3 minutes on each side.
  3. Transfer the chicken to the slow cooker and layer with bell pepper, onion, and garlic.
  4. Pour in diced tomatoes and chicken broth.
  5. Cover and cook on low for 4-5 hours or high for 2-3 hours.
  6. Shred the chicken once cooked and return it to the pot.
  7. Stir in heavy cream and Parmesan until melted and creamy.
  8. Cook pasta according to package instructions, then add to the slow cooker and stir.
  9. Allow to heat together for another 15-20 minutes.
  10. Serve hot, garnished with parsley.

Notes

Don’t skip the searing step for better flavors. Feel free to substitute the protein or pasta as desired.
