Ingredients

  • 2 Juicy grilled chicken breasts

  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • Smoky chipotle-lime dressing (store-bought or homemade)

Instructions

  1. Grill the chicken until fully cooked (about 6-7 minutes per side), then let it rest and slice.
  2. In a large bowl, mix the sliced chicken, black beans, sweet corn, chopped romaine, diced avocado, and cherry tomatoes.
  3. Drizzle with the smoky chipotle-lime dressing and gently toss everything to combine.
  4. Serve immediately or store for meal prepping throughout the week.

Notes

For a vegetarian option, substitute grilled tofu or use quinoa for extra protein. Marinate chicken for extra flavor.
