Description

Enjoy a flavorful and satisfying Southwest chicken wrap packed with grilled chicken, fresh vegetables, and creamy avocado.


Ingredients

  • 2 grilled chicken breasts, sliced
  • 1 cup black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 large whole wheat tortillas
  • 1 cup lettuce, chopped
  • 1/2 cup salsa
  • 1/4 cup cilantro, chopped
  • Lime wedges for serving
  • Salt and pepper to taste


Instructions

  1. In a large skillet over medium heat, combine the sliced chicken, black beans, corn, and diced red bell pepper. Stir and cook until heated through, about 5-7 minutes.
  2. Season the mixture with salt and pepper to taste.
  3. Lay out the tortillas flat and evenly distribute the chicken mixture among them.
  4. Top each tortilla with avocado slices, shredded cheese, lettuce, salsa, and cilantro.
  5. Tightly wrap the tortillas, folding in the sides to secure all fillings.
  6. Serve each wrap warm, alongside lime wedges for a zesty kick.

Notes
