Ingredients
- 2 grilled chicken breasts, sliced
- 1 cup black beans, rinsed and drained
- 1 cup corn (fresh or frozen)
- 1 red bell pepper, diced
- 1 avocado, sliced
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 4 large whole wheat tortillas
- 1 cup lettuce, chopped
- 1/2 cup salsa
- 1/4 cup cilantro, chopped
- Lime wedges for serving
- Salt and pepper to taste
Instructions
- In a large skillet over medium heat, combine the sliced chicken, black beans, corn, and diced red bell pepper. Stir and cook until heated through, about 5-7 minutes.
- Season the mixture with salt and pepper to taste.
- Lay out the tortillas flat and evenly distribute the chicken mixture among them.
- Top each tortilla with avocado slices, shredded cheese, lettuce, salsa, and cilantro.
- Tightly wrap the tortillas, folding in the sides to secure all fillings.
