Description

A comforting and creamy Cajun Potato Soup with zesty flavors, perfect for chilly days.


Ingredients

  • 1 lb Andouille sausage
  • 4 cups Potatoes (Yukon Gold or Russet), diced
  • 1 cup Onion, chopped
  • 1 cup Bell pepper, chopped
  • 1 cup Celery, chopped
  • 2 tbsp Cajun spices (blend or homemade)
  • 1 cup Heavy cream
  • 1 cup Cheddar cheese, shredded
  • Salt and pepper, to taste


Instructions

  1. Cook the andouille sausage in a large pot over medium heat until browned.
  2. Add chopped onion, bell pepper, and celery; sauté until softened and fragrant.
  3. Add diced potatoes and sprinkle Cajun spices.
  4. Pour in enough water or broth to cover the potatoes; bring to a boil.
  5. Reduce heat and simmer until potatoes are tender.
  6. Stir in heavy cream and cheddar cheese until melted and creamy.
  7. Taste and adjust seasoning with salt and pepper.
  8. Serve hot, topped with chopped green onions if desired.

Notes

For a vegetarian version, substitute the sausage with mushrooms. Store leftovers in an airtight container for up to 3-4 days, or freeze for 2-3 months.
