A comforting and creamy Cajun Potato Soup with zesty flavors, perfect for chilly days.
Ingredients
- 1 lb Andouille sausage
- 4 cups Potatoes (Yukon Gold or Russet), diced
- 1 cup Onion, chopped
- 1 cup Bell pepper, chopped
- 1 cup Celery, chopped
- 2 tbsp Cajun spices (blend or homemade)
- 1 cup Heavy cream
- 1 cup Cheddar cheese, shredded
- Salt and pepper, to taste
Instructions
- Cook the andouille sausage in a large pot over medium heat until browned.
- Add chopped onion, bell pepper, and celery; sauté until softened and fragrant.
- Add diced potatoes and sprinkle Cajun spices.
- Pour in enough water or broth to cover the potatoes; bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Stir in heavy cream and cheddar cheese until melted and creamy.
- Taste and adjust seasoning with salt and pepper.
- Serve hot, topped with chopped green onions if desired.
Notes
For a vegetarian version, substitute the sausage with mushrooms. Store leftovers in an airtight container for up to 3-4 days, or freeze for 2-3 months.
