Description

Ingredients

  • 1 lb chicken thighs or breasts (boneless and skinless)
  • 1 can coconut milk
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 bell pepper, sliced
  • 2 tbsp olive oil
  • Fresh cilantro or parsley for garnish
  • Salt and pepper, to taste
  • Optional: lime wedges for serving


Instructions

  1. Start by marinating the chicken with salt, pepper, and a touch of garlic.
  2. In a large skillet, heat olive oil over medium heat. Add the onions and sauté until they become translucent.
  3. Introduce the garlic and ginger to the skillet, stirring for an additional minute until fragrant.
  4. Add the marinated chicken pieces to the onion mixture, browning them on all sides.
  5. Pour in the coconut milk and add the sliced bell peppers. Allow everything to simmer until the chicken is fully cooked.
  6. Adjust seasoning as needed, then serve hot, garnished with fresh herbs.

Notes

For deeper flavor, marinate the chicken for at least an hour or overnight.
