- 1 can coconut milk

Instructions
- Start by marinating the chicken with salt, pepper, and a touch of garlic.
- In a large skillet, heat olive oil over medium heat. Add the onions and sauté until they become translucent.
- Introduce the garlic and ginger to the skillet, stirring for an additional minute until fragrant.
- Add the marinated chicken pieces to the onion mixture, browning them on all sides.
- Pour in the coconut milk and add the sliced bell peppers. Allow everything to simmer until the chicken is fully cooked.
