Description

A delightful salad combining fresh broccoli, creamy nuts, and a tangy honey Dijon dressing, perfect for any occasion.


Ingredients

  • 4 cups fresh broccoli florets, chopped
  • 1 cup red grapes, halved
  • ½ cup red onion, finely diced
  • ½ cup sunflower seeds or chopped walnuts
  • ¼ cup feta cheese, crumbled (optional)
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • ¼ cup olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat a pan over medium heat. Add the sunflower seeds and toast them for about 3-5 minutes, stirring frequently.
  2. Prepare your broccoli by chopping it into bite-sized florets. Blanch briefly in boiling water for a minute, then plunge into ice water to cool.
  3. Whisk together honey, Dijon mustard, olive oil, salt, and pepper in a small bowl until smooth.
  4. Combine the cooled broccoli, grapes, red onion, and toasted seeds in a large mixing bowl. Pour the dressing over the salad and toss gently.
  5. Finish with crumbled feta cheese, if using, and toss once more before serving.

Notes

For best results, store the dressing separately until serving to maintain the salad’s crispness. Can be enjoyed fresh or after sitting for a few minutes to meld flavors.
